I took my first The Art of Cheese class last night and I loved it! Can’t wait to try making brie at home. I’m really looking forward to taking more of Kate’s classes. Last night was so much fun, and I learned a lot too. One thing that I really liked is that the classes work well for both beginners and people who have made some cheese before. I’ve made a few soft cheeses, so I know some of the basics, but Kate presented the information in such a way that I didn’t feel like I was hearing a bunch of stuff I already knew. My daughter and I really enjoyed this class. We learned so much in a short amount of time and left with confidence knowing we would soon be making our own single batch of cheese. When we arrived back home the next day we had a dinner party and displayed our mozzarella, our friends were all so impressed that it tasted so much different and better than store bought. I have had the opportunity to take three different cheese classes with Kate. The classes were all filled with great information about the different cheeses, and techniques that can easily be applied for making cheese at home. As a cheese lover, I was first drawn to Kate’s class as a student and was so impressed that I wanted to help spread the word about her valuable teachings. I set up a series of classes at our local Senior Center, and the evaluations were some of the best I’d ever seen. Kate’s passion for cheese making is infectious, and her ability to simplify and demystify the process makes it accessible to anyone. Tasting fresh-made cheese is truly a sensual experience and connects us with our food in a way that has been lost in our culture, for the most part. Having the tools to make these wonderful treats ourselves is an added bonus. Kate offers us these gifts, along with her down-to-earth, fun and engaging style. But, more than that, this is a woman who is committed to making the world a better place—in her own family, her work with kids (yes, both goat and human!), her personal coaching, her active involvement in environmental causes, and her focus on sustainability. I’m a huge cheesy fan of Kate Johnson and The Art of Cheese. From the day I sat in Kate’s mozzarella class just to learn more about her to do some graphics for her business, I became home-cheese empowered and enchanted. I sought more teaching about cheese making from Kate and began my Guide Italian cheese-making habit! Kate’s skills as a coach and farm-woman and her playful and generous style demystifies cheese-making and makes it easy to give your home and your friends wonderful homemade cheeses. Kate is great! She’s very engaging, will make you laugh during class, and has a very inclusive attitude when teaching. My boyfriend and I attended a silver level class and really loved the experience. She makes the material fun and provides take home resources to support you through the entire process. I left feeling knowledgeable and eager to try the recipes myself at home, and I was able to purchase very reasonably priced kits and supplies after class to get started. I first signed up for a Trappist style cheese class having no idea that it was one of the hardest cheeses to make and one of the most difficult classes. That didn’t matter: Kate made it easy enough for me to understand everything throughout the class and the cheeses we tasted at the end were incredible! I enjoyed the class so much that I signed up for several more classes and have been enjoying beginning cheese-making at home. I took the Cheesemaking 101 and absolutely loved it! Kate was extremely knowledgeable and very engaging. All the material was interesting and informative. I was really excited that when we walked in there was a plate of cheese samples! Anyway, the content was really good for giving you an idea of what’s involved with home cheesemaking and understanding the process of milk becoming cheese. Very fun, I would definitely recommend for those who love to cook, love to learn, or just love cheese! I will most likely be doing more classes in the future. -Nicole W.

In August, 2015, I attended The Art of Cheese 3 day Bootcamp. Each day was full of hands-on cheese making, demos by Kate and Becca, and field trips to local cheese making and sales venues. The enthusiasm of these presenters transferred immediately to myself and the other students. All of us walked away with the knowledge and confidence to begin making cheese at home. I love classes at The Art of Cheese! Great atmosphere, very organized, and lots of hands-on time. You can leave class with recipes and hand-outs so you know how to repeat the cheeses and where to get all the milk and supplies you need. In addition to the wealth of knowledge Kate and Becca bring to each class, they also make room for fun little surprises so that each class is memorable and unique. While on vacation w/my daughter, I happened to stumble upon an ad for the Bronze level cheesemaking class. The class was GREAT – definitely a one of the highlights of our trip! Kate is a wonderful instructor and she taught me so much. I’ve made cheese for a couple years now but am self-taught so having someone “experienced” to explain things was WONDERFUL!!!
