This class teaches you how to make Primo Sale, a fresh cheese that our founder, Kate, learned how to make at a 100-year old family creamery in Italy. The name of this cheese refers to the unusual step of adding salt to the milk before the culture and rennet are added. The curds are then scooped into baskets and pressed under their own weight. You’ll get to see lots of pictures and videos of this cheese being made in Italy as well as in our own farm-based cheese room.
