Parmigianino-Reggiano is an Italian cheese with a protected designation of origin (PDO – DOP in Italian). This means that to be a true Parmigiano-Reggiano the cheese must be made in a specific region in Northern Italy and be made to many traditional specifications. However, American cheesemakers have been making Parmesan, their own domestic version of the historic Italian cheese. True Parmigiano-Reggiano is made with 131 gallons of milk and aged 1-3 years. Since this isn’t feasible for the home cheesemaker, we’ve created a mini Parmesan that is perfect for the home cheesemaking scale!
