These two cheeses aren’t what most people think of when they think of “cheese.” They’re not grate-able, slice-able or melt-able, but they are indeed creamy and delicious cheeses. Mascarpone is a decadent, dessert style cheese most famously used as the base for Tiramisu but also used in a variety of other ways from desserts to soups to mashed potatoes. Quark is a German staple that resembles yogurt but is milder and made more like a cheese. It, too, is wonderful in a whole host of recipes (some of which we’ll share) but also good as a healthy snack enjoyed much like yogurt.
