Traditionally a sheep’s milk cheese, today Halloumi can be found made from sheep, goat, cow or a combination of milks. Because of its high salt content and versatility (it can be eaten fresh, grilled, or stored in brine for longer periods of time), this was and remains an excellent choice for the home cheesemaker.
