Halloumi is a wonderfully unique grilling cheese! This cheese can be traced back to the Medieval Byzantine Era and is still made in much the same way. Traditionally a sheep’s milk cheese, today Halloumi can be found made from sheep, goat, cow or a combination of milks. Because of its high salt content and versatility (it can be eaten fresh, grilled, or stored in brine for longer periods of time), this was and remains an excellent choice for the home cheesemaker.
