Description
These three cheeses are in a family called Washed Curd Cheeses. Each one does the “washing” a little differently but the basic technique involves removing some of the whey during cooking and replacing it with water. This washes some of the acid off the curds resulting in a mild tasting cheese with a moist supple texture. In this class we will make a batch of Colby together and go over the recipes for the other two cheese to see where they are different. Each participant will then get a chance to wax their own little wheel of Colby to take home to age.
