This Cheesemaking 101 class will take place after the Goatkeeping 101 workshop from approximately 11:30 am to 1:00 pm. Here’s what you’ll learn:
- The basic art and science behind cheesemaking
- The simple ingredients needed and how to source them
- All about milk – the fundamental building block of cheese
- How to make several simple artisan cheeses yourself (with sampling!)
First, we’ll use some of the fresh milk from our morning milking of the goats to make a delicious and simple homemade goat milk ricotta. You’ll get to enjoy this cheese warm and fresh with some bread and honey.
Next, we’ll cover two different recipes for Chevre & Fromage Blanc. Chevre is the classic soft goat cheese that most people are referring to when they say “goat cheese” while Fromage Blanc is a very similar cheese made from cow milk (or anything other than goat milk). We’ll enjoy these fresh cheeses with some crackers and you’ll get a chance to make your own mini log of custom-flavored Chevre.
We will have plenty of cheese sampling but feel free to bring your own additional lunch items if you’d like more of a meal.
