Learn to make the cheeses you want when you want to!  Stilton Blue Cheese is an English Semi-soft blue typically made from cow milk but easily adapted to goat milk as well. It has a rich and mellow flavor and is milder than Roquefort or Gorgonzola. It is creamy with a yeasty sweetness and a salty, nutty finish. The natural rind is washed with a salt solution every few days during the aging process. Our version of Stilton is made in a cheese form but not actually pressed, which allows for the marbley blue interior it is known for.
