Asadero is an excellent melting cheese originally from Mexico. This pasta-filata, or stretched-curd cheese, is mild with a creamy texture and pleasant hint of acidity. Queso Asadero roughly translates to “cheese for grilling” and is perfect in almost any recipe, especially quesadillas!
