We’ll start by learning how to make a simple Italian Hard Cheese and you’ll get to take home your own mini wheel of this cheese to age yourself. But how do you want to age it? We’ll cover the 7 options listed above and you’ll get to taste how different this one cheese recipe turns out depending on the technique you choose.
At the end of class we’ll take a quick tour of the Haystack Mountain Creamery and talk about how they have different aging rooms for their different aging techniques, but how as home-cheesemakers, we have to improvise in our one-size-fits-all aging refrigerators!
