I’m challenging you to learn how to make 7 Cheeses in 7 Days (or at least in 7 Lessons which you can take at your own pace)! We’ll start at the very beginning with the simplest cheeses and then each class will build on the knowledge from the previous one. By the last class you will be making a pressed, aged cheese.
These are the cheeses we’ll cover:
- Day One: Mascarpone
- Day Two: Paneer
- Day Three: Chevre/Fromage Blanc
- Day Four: Quark
- Day Five: Cottage Cheese
- Day Six: Feta
- Day Seven: Guido’s Italian Hard Cheese
Since you are not going to be making the cheeses in real-time along with the videos (long waiting periods between many steps make this impractical), it is not necessary to have all your ingredients and equipment in place before you begin. But when you are ready to make the cheeses, we highly recommend the New England Cheesemaking Supply Co. as a good one-stop-shopping resource.
BONUS! We’ll also give you a link and recipes for our Cheesemaking 101 Course as a bonus. This 20 minute introduction to cheesemaking reviews the basics about the science behind making cheese, ingredients and equipment needed, and sourcing good milk. It also goes over how to make homemade ricotta!
