$39These washed-curd cheeses have a mild flavor and a moist texture which is created by diluting the whey with warm water during the cooking process. They are pressed and ripened like harder cheeses, but don’t require long-term aging to develop a full aroma and flavor. We will make a simple and delicious Colby together in class, and taste samples and review recipes for Havarti and several others.
