Taleggio & Other Funky Cheeses! – 7:00 pm

Taleggio is in a class of cheeses that share a technique called “washed rind”.  This family of cheeses is finished during the aging process by washing their rinds with a cloth soaked in brine, to which a ripening bacteria may be added which results in a bright orange fragrant rind.  Other washes might include beer or wine and some varieties might include the addition of herbs and spices. In this class we will make and sample an award-winning Taleggio recipe and also cover a nice general Trappist-style cheese recipe which has a mild, creamy and buttery flavor.  Several other delicious washed-rind cheese recipes will also be in your recipe packets and you’ll get to sample some of Haystack’s washed-rind cheeses!

If you’ve never made cheese before, you might want to register for our free “Cheesy-Pedia” to download and read before you come! This will help familiarize you with the basic concepts before you dive into these intermediate and advanced level cheeses.
