Kate recently visited Amsterdam and went to a cheesemaking shop in the village of Zaanse Schans where Gouda is made.  She brought back lots of delicious varieties for you to enjoy (including smoked, aged, lavender and pesto) as you learn how to make this delicious cheese for yourself.  You’ll get hands-on experience with the technique of  “washing curds” and find out why it makes this cheese so delicious.  You’ll even get to wax or smoke your own tiny wheel of Gouda to take home and age for yourself!  Recipes for Colby & Havarti will also be included as these are other examples of washed curd cheeses.
