Have you been making cheese for awhile and want to increase your confidence, inspire your creativity and take your cheesemaking abilities to the next level?   This class is for you!

Join Kelly Liebrock, Certified Cheese Professional, Cheese Monger and Professional Cheesemaker as she unravels some of the mysteries of cheesemaking and the science behind it all. She’ll help you to become a better, more versatile cheesemaker by helping you understand what’s happening on a molecular level. She’ll also help you troubleshoot and write or tweak your own recipes so bring some of your finished cheeses to share and get feedback.

What we’ll cover:

  • Understanding Milk – from fat to proteins to calcium, phosphate and more
  • Cultures – different strains for different tastes
  • Rennet – How it works and what the “flock” is
  • Time & Temperature – Why it’s important and how to troubleshoot
  • Show & Tell – Bring your cheeses to taste and get feedback; plus taste a few of ours (with wine, of course!)
  • Sensory Evaluation – Learn to Taste Cheese like a Pro!
