During Kate’s recent trip to Italy she had the good fortune to attend a cheesemaking class at a 100-year old family creamery where she learned how to make an authentic fresh cheese called Primo Sale. The name of this cheese refers to the unusual step of adding salt to the milk before the culture and rennet are added. The curds are then scooped into baskets and pressed under their own weight. You’ll get to see lots of pictures and videos of this cheese being made in Italy as well as in our own farm-based cheese room. In addition to the authentic cow milk version of this cheese, Kate will also show you how to make a Petite Goat Milk Primo Sale and how to flavor your curds if you want a little more variety.
This live, interactive session will happen at 11:00 am MT on September 24, 2022 and will be taught by Art of Cheese Owner & Lead Cheese Coach, Kate Johnson. But don’t worry if you can’t attend the session at that time! A recording will be available for you to watch at your convenience shortly after the class.

Step 4: On the date and time of your class, simply click on the link to attend the session and start learning! Or if you can’t make it at that time, watch the recorded session which will be e-mailed to you at the conclusion of the class and you can watch it at your leisure.
