Washed-curd cheeses have a mild flavor and a moist texture which is created by diluting the whey with warm water during the cooking process. They are pressed and ripened like harder cheeses, but don’t require long-term aging to develop a full aroma and flavor. We will make a simple and delicious Colby together in class, and taste samples and review recipes for Havarti and several others.

New Location!  The Art of Cheese is moving to Launch Longmont in February, located in the old Times-Call Building at the corner of 4th and Terry in downtown Longmont.  Enter on 4th Ave.
