The Artisanal Course takes what you may already know about cheese making to the next level! Enjoy three fun-filled days immersed in the fascinating world of cheese. You will learn the principles of great cheesemaking as we make at least seven different cheeses and focus on topics such as milk sources and how to assess milk quality, hygiene and sanitation, microbial cultures and rennet, proper equipment, the magic of cheese aging, cheese and wine pairing, salting and brining, cheese marketing, and much more. This class will focus on knowledge needed to become a commercial cheesemaker, but is also appropriate for anyone who wants to improve their own personal cheesemaking!
Included in all classes is lunch each day with wine, an extensive cheese tasting, our complete artisan cheesemaking manual with recipes, and an extensive resource section which will guide you to all the necessary tools and information to make wonderful cheese!
We’ll also tour the new Haystack Mountain Cheese Creamery on Day One, and we’ll be hosting a Farm-to-Table Dinner at nearby Briar Gate Farm on the evening of Day Two. You’ll get a chance to meet our dairy goats and see the newest spring babies.
In order at ensure plenty of hands-on experience, each class is limited to 10 students.
