Whether you’re an experienced cheesemaker, or just getting started, sometimes you just want a good cheese that doesn’t take weeks – or months – before you can eat it. This flexible and easy recipe produces a semi-hard cheese that you can eat in just 3 days. It’s unique because you can shred it, melt it, or eat it alone. Normally such a young cheese lacks flavor, but this recipe allows for the use of flavor infusions, like toasted cumin, a variety of peppers, or dried herbs. An added bonus is that you have the option to age this cheese for even more flavor development.

This class will be taught by Denise Milligan of Spanish Sunday in her own cheesemaker’s home kitchen in Longmont.  Address to be given upon registration.
