In this class, we’ll move into pressing and aging hard cheeses. Guido’s Italian Parm-style cheese is a great aged cheese to learn with because it’s fairly simple and very versatile. Not to mention, it’s delicious! In addition to teaching you how to make the cheese and how to press it, we’ll also teach you 8 different ways you can age this cheese from natural rind to waxing to bandaging and everything in between! You’ll get to taste some delicious samples with a nice glass of Chianti and take home your own little wheel to age.
