Most of our classes are held in our classroom at the new Haystack Mountain Cheese Creamery at 505 Weaver Park Rd., Suite E, Longmont, CO.  These are highlighted in Orange on the calendar.

Some of our classes are held offsite at breweries, restaurants, wineries and farms.  These are highlighted in Green.

One-Day Artisanal Cheesemaking Course with Linda & Larry Faillace

Taught by renowned cheesemakers and cheese educators, Linda & Larry Faillace from Three Shepherds of the Mad River Valley of Vermont!  The Faillaces have taught cheesemaking all over the world for the past 20 years, including teaching many of today’s award-winning creameries!  This is their first time teaching in Colorado.

Join us for this one-day, hands-on class which will cover a  full spectrum of topics including: the history and biology of cheesemaking, the principles of artisan cheesemaking, how to choose the best milk for making cheese, basic equipment and ingredient needs, and much more.  The class will run from 9:30 am until 3:30 pm and includes a wonderful lunch (complete with wine & cheese!), a cheesemaking manual, as well as everything that is needed for cheesemaking that day.
