Intro to Pressed & Aged Cheese with Cheese & Wine Pairing – 2:00 pm

Whether you’re brand new to cheesemaking or you’ve already made some soft cheeses and are now ready to venture into pressed and aged cheeses, this class is for you! We will start by making a delicious Italian hard cheese that uses simple ingredients and minimal equipment and only needs to age for 3 weeks! We will also go over a simple technique called “washing the curds” that is used when making cheeses like Colby, Havarti and Gouda. Plus you will learn how to age cheeses in a simple-to-make “cheese cave”, how to wax a cheese wheel, and and how to make a cheese press for free! We will also enjoy several nice Haystack Mountain cheeses perfectly paired with a nice glass of wine.
