Most of our classes are held in our classroom at the new Haystack Mountain Cheese Creamery at 505 Weaver Park Rd., Suite E, Longmont, CO. These are highlighted in Orange on the calendar.
Some of our classes are held offsite at breweries, restaurants, wineries and farms. These are highlighted in Green.
We also offer multi-day, themed cheesemaking courses and these are highlighted in Blue.

Colby, Havarti & Gouda with Free Cheese & Creamery Tour – 1:00 pm

These cheeses are all varieties of washed-curd cheeses which have a mild flavor and a moist texture created by diluting the whey with warm water during the cooking process. They are pressed and ripened like harder cheeses, but don’t require long-term aging to develop a full aroma and flavor. We will make a simple and delicious Colby together in class, and taste samples and review recipes for Havarti and Gouda. At the end of class we’ll take you on a behind-the-scenes tours of the Haystack Mountain Cheese Creamery and you’ll get to take home a free log of their award-winning chèvre.
